Ratatouille Sloppy Joes

1 tsp olive oil
1lb extra-lean bison or ground beef (I used turkey)
3 garlic cloves, minced
1 medium onion, diced
2 tsp chile powder
3/4 tsp mustard powder
1/8 tsp cayenne pepper
1 sweet red bell pepper, diced
1 medium zucchini, diced
1 small eggplant (3/4lb), diced
1 1/2 cups organic Marinara Sauce
1 Tbsp organic evaporated cane juice or raw honey
Sea salt and fresh groubd black pepper to taste
8 thin whole-grain sandwich buns, toasted

1. Heat a large nonstick saute pan over medium-high heat. Add oil, meat, garlic and onion and cook for 5-8 mins. Breaking up meat with a spoon while cooking, u til no liquid remains and meat is browned. Add chile powder, mustard, and cayenne powder, stir well and continue to cook for 1 minute. Pour meat mixtute into a bowl and set aside

2. Return pan to heat and add bell pepper, zucchini and eggplant, stir and saute for 3-4 minutes. Add meat mixture back to pan, stir well and reduce heat to medium. Cook for an additional 10-12 minutes, stirring often, or until vegetables are tender and cooked throughout.

3. Add Marinara sauce, 2Tbsp water and sucanat or hoeny to pan, stirring until meat and vegetables are coated. Cook until sauce is hot and bubbling. Season with salt and pepper. To serve, sandwich 3/4 cup meat mixture between each bun.
