the other night at the grocery store i was looking at the back of food labels (a good, but to my husband, an annoying habit) and noticed that lentils were only 80 cal and 11 g of fiber per serving woohoo my kind of food, so i bought a bag. i have never eaten lentils, let alone make them, :grumble: anyone have any good recipes for them or ideas of what exactly do i do with them. :embarassed:

    Lentil soup comes to mind... tasty and hearty and very healthy for you:flowerforyou: I'll hunt around and see if I can find a recipe for you :)
  • my wife doesn't like my recipes, But I give it to anyway. a little olvie oil an onion some garlic fry that in a dutch oven. add the lentils 1 can of rotels salt and pepper to taste. I even eat it cold in my salad.
    but there are plenty of great recipes for lentils they go real good with humus.

    Here's a recipe from the site just mentioned:
    I've not tried this as I just came across it, but it does sound like something I would.

    I see it doesn't have nutrient or serving content...though there is Recipe Conversion Thread in the Recipe Section on MFP to figure that part out...and of course change a few things up if you'd like to make it healthier, perhaps no fat or low fat sour creme, low fat cheese, etc.

    Mexican Platter Submitted By:Mary Barstow

    INGREDIENTS
    1 c. lentils
    3 cups water
    1 package taco seasoning
    2 ripe tomatoes
    5 green onions
    1 cup grated cheddar cheese
    1 can (2 1/2 oz.) sliced ripe olives
    2 ripe avocados, mashed
    1 Tbsp. of the sliced green onions
    2 Tbsp. chopped tomatoes
    2 Tbsp. Pace Picante
    1 c. sour cream

    DIRECTIONS
    Rinse, cover with 3 cups of water, bring to a boil and simmer for two hours, stirring occasionally, until the water is mostly absorbed. (The mixture should be moist, easy to stir, but not runny. If it gets too dry add more water.) Add 1 package of taco seasoning, the last half hour, stir well.


    While the lentils are cooking: chop 2 ripe tomatoes, set aside in a bowl.
    Slice 5 green onions, set aside
    Grate 1 cup of cheddar cheese
    Open 1 can (2 ½ oz.) of sliced ripe olives and drain

    Make guacamole of the following:

    2 ripe avocados, mashed
    1 Tbsp. of the sliced green onions
    2 Tbsp. chopped tomatoes
    2 Tbsp. Pace Picante
    1 c. sour cream

    Mix and refrigerate until ready to use.

    When the lentils are nearly done, cook 2 cup of calrose, short grain rice, according to directions on package. (This will be a sticky rice).

    To assemble platter, pat down the rice – up to ¾” thick on a round platter, (wet hands in cold water to make it easier to pat down), spoon the seasoned lentils over the rice, leaving a little of the rice showing around the edge. Sprinkle the cheese over the lentils, then spoon the guacamole over the cheese, (with each layer leave a little of the previous layer showing) top with the chopped tomatoes, sliced green onions and sliced ripe olives. Serve in pie shaped pieces with pace picante drizzled on top.

    This is a meal in itself, but a salad or French bread could be served with it. I served this to college aged students and they loved it! A doubled recipe makes 9” x 13” pan – which would be cut in squares.

    Lentils cook fairly fast (compared to dry beans) so use them in place of other legumes and whalla a nutritious easy way to add some good stuff to your food. I throw them in a minestrone soup, lentils and ham...

    That is cool!! Glad to meet someone else from the area -- thanks, plan to make it back without a scratch (knock on wood)!! I am a transplant -- been there 2.5 yrs.. love the area but, prob won't stay Uncle Sam makes that decision for me. :happy: Yes, please hold off the winter I am already scared of what I am coming back to -- from 107 to what!!!! Man it is going to be cold to me!! oh well... home is still home! :happy:

    I make lentils like I make my basic brown rice: 1 cup lentils to 2 1/2 cups low sodium chicken stock. I cook it on high until it boils, and then reduce heat to medium-low. I cook with the lid on until all the liquid cooks off. Lentils should be "al-dente" and not mushy.

    I love to top lentils with "fried" eggs-using a non stick pan and Pam, of course:happy:

    I also include lentils in one-pot meals and soups. They are great and verstile.

    I made lentil soup the other day and it was out of this world in the Vitiman and Nutrient factor!

    Roughly this was my recipe.

    2 large carrots chopped
    1/2 onion chopped
    2 slices center cut bacon
    2 parsnips chopped
    1 rib of celery chopped
    1 clove garlic minced
    1 bag lentils dry
    1 cup chopped low sodium ham(i bought it prechopped for ease)
    6-8 cups water
    salt and pepper
    dash of cayenne pepper

    I used a food processor to chop up the carrots, parsnips and celery, I like it really fine.

    I fried the bacon and left in the litte bit of fat in the bottom. Added garlic, and then the carrot/parsnips/celery. let it brown a little.

    added all the rest and cooked for around an hour.

    It was delicious and DH loved it!:drinker:
