Moosewood at Home calorie count

OK, I know there must be some other folks who love the Moosewood Cooks at Home cookbook, because so many of their recipes are in the database. But I have started to wonder about the calorie counts in the book. For most meals they list an 8 oz portion. I assume this means 1 cup in volume. Today I calculated out the calories in a recipe-- Udon Noodes with Vegetables. The book says the recipe feeds 2 people and that the calories in an 8 oz portion are 281. When I calculated it in MFP, the calorie totals were more like 408 if I say the recipe feeds 4 people, which seems much more realistic, given the recipe calls for 8 oz of noodles total, in addition to tofu, vegetables, etc..

So, I am a total nerd, but has anyone else delved into this question? I'd love to know what you found!
