I found one that looked good (http://simplyrecipes.com/recipes/asparagus_pesto_with_pasta/) but it calls for pine nuts=$28/lb. Yikes. Will walnuts work? Or anyone know of other good recipes with asparagus? I have some I need to use up asap. And I'm craving pasta big time.

My wife will toss the asparagus in the blender and make a pesto sauce that we eat over pasta. I know there is more to it than that, but she hates it when I come into her kitchen and get in her way.0

I had this last week - it's very simple but it was good!0 -
I got this off the back of the pasta box:
1 box of penne pasta (I use Barilla whole grain penne)
2 TBSP extra virgin olive oil
1 clove of garlic (I use minced garlic in a jar - 1 teaspoon)
1 small, finely chopped white/sweet onion
1 cup chopped yellow bell pepper
1 cup chopped red bell pepper
1 small zucchini squah - diced
1 small yellow squash - diced
1 bunch of asparagus, cut into 1 inch pieces
1 pint cherry tomatoes - halved (I diced 2 plum tomatoes; can also use 1 can of diced tomatoes)
Cook pasta according to package directons. Meanwhile, heat the olive oil in a large skillet. Add garlic - sautee in skillet for 1 minute, until lightly brown. Add onions and sautee for 5 minutes, until translucent. Add peppers, zucchini, yellow squash and asparagus, and sautee until heated but not completely cooked. Add tomatoes, season with salt and pepper (or your seasonings of choice) and sautee for another 2 minutes. Drain pasta and toss with the sauce/vegetable mixture. In a separate pan, sautee shrimp and scallops. When done, drain off any liquid and then add to the pasta/vegetable mixture. Toss and serve. Serves 10 or more people.0 -
I do a chicken picatta and just add the asparagus in the picatta sauce (chopped and sauteed first) then I pour it all over spaghetti. It is delicious and adds a nice crunch.0

I make a pasta ( penne ) with asparagus and tomatoe sauce. Half an onion, 2 cloves minced garlic, tbs of olive oil. Add 15 oz can of tomatoe sauce. When I throw pasta in water I add asparagus to sauce. Once pasta's done, asapagus should be soft and edible. If not let cook a few more minutes. Enjoy and good luck with weight loss.0
