Ideas for High Fiber recipe a teen would eat??

I have a teen that just hates all of the high fiber recipes I've tried. She hates nuts of any kind, hates the taste of wheat. Doesn't like fruit. Loves green vegis though. Any ideas on recipes with natural fiber from foods other than vegis?

    Does she like spaghetti? I had high fiber whole wheat spaghetti for dinner. It is marvelous and my teenager loves it too!!

    Well, I personally would use Benefiber. no taste, nothing different about it. You can add it to drinks, food, anything you want. I know it's not a food like you were interested in, but it is worth a look into.

    I know this isn't a recipe, but has the teenager tried Fiber One Bars? I believe they are 35 percent of your daily fiber and they taste like candy bars! You can't taste any fiber in them! There's chocolate, peanut butter, caramel, cinnamon apple, strawberry and almond, and mocha flavored ones I believe. I eat the chocolate ones all the time!

    There's a company called Fiber 35 I think that as protein shakes if she likes them. Its hard to get a lot of fiber daily and harder still to find in food other than veggies. Good luck!

    Fiber One bars (mocha chocolate) with peanut butter (Earth Balance makes a kind with flax seed, so it's 3g fiber per serving)

    FiberPlus Antioxidants Cinnamon Oat Crunch cereal (tastes like cinnamon honey cheerios)

    Ingredients
    1 1/2 cups pitted dates, soaked overnight and drained
    4 tbsp raw cashew butter (omit if nut allergy)
    2 – 3 tbsp mesquite powder
    2 pinches salt
    5 or more apples (try to get organic)
    5 or more popsicle sticks
    Optional Toppings: chopped nuts, shredded coconut, chocolate shavings, seeds of choice, etc.

    Instructions
    To make your caramel sauce, blend the dates, cashew butter, mesquite powder and salt in a food processor, to make a thick, smooth paste. Stop blending periodically in order to scrape down the sides of the processor and to shove all of the ingredients back towards your blending blade.
    Insert the tip of a popsicle stick into each apple, and using a butter knife, coat each apple with the caramel sauce. If desired, sprinkle on your optional toppings.
    Serve right away, or line a flat baking sheet with parchment paper, place the caramel apples on it (popsicle sticks pointing upwards), and refrigerate.

    Chicken "Tortilla-less" Soup:

    1 TBSP olive oil
    1/2 cup onion, chopped
    2 cloves garlic, minced
    4 cups chicken broth, low sodium (I use Kitchen Basics, no added salt)
    1 can (14.5 oz.) diced tomatoes, (**prefer fire-roasted tomatoes)
    8 oz. chicken breast*, shredded
    1 can Goya pinto bean, light (thoroughly rinse to decrease sodium)
    1-1/3 cups corn, frozen
    1 tsp sea salt
    1 tsp black pepper
    1 tsp red pepper
    1 TBSP cumin

    *I use rotisserie chicken stripped from the carcass & chopped, it adds tons of wonderful flavor & make prep really easy!

    Saute onions & garlic in olive oil. Add the remainder of ingredients & simmer for 30 minutes. Once again, I often add some extra cumin or a little chili powder, as I like some heat. May add garnishes such as avocado, tortilla strips & cheese. (Note: garnishes are NOT included in calorie count.) Serving size: 2 cup.

    Nutrition Info/cup: calories 282 / fat 6 / carbs 34 / protein 24 / fiber 10

    I usually serve a 2 cup serving (double the calorie info) & add a little 2% Mexican Cheese mix & some fresh avocado cubes. You really don't need the tortilla strips, as the corn gives you the same flavor, but kids may love it with added tortilla strips for crunch. If you want to add more food for your hubbie or kids, serve with chips & fresh homemade guacamole, or make them a cheese quesadilla.

    **I love the taste of fire-roasted tomatoes, so I use those, instead of plain tomatoes (I believe it's Hunt's brand). My sister has changed my recipe up a bit, and replaces the tomatoes with a jar of salsa, adds a whole jalapeño (remove at the end of cooking) & the juice of one lime. Both of our families love the soup & ask for it often!

    Served with homemade whole grain tortilla chips... Extra bonus.

    If she likes green veg, then adding Kale to anything will be great for her fibre intake as well. Good luck!
