Okay here is something I made Saturday and it was so yummy. I don't keep track of calories on weekends so I don't have any of that info, but it can't be too bad for you.
Okay you will need
Salmon fillets ( cut into card deck size peices)
1 can black beans
1 can white corn
1 cup salsa
1 tbls sugar
salt and pepper
In large bowl combine beans, corn, salsa, and sugar. then spoon about 1/4 cup of bean mixture in the center peice of foil and kind of spread it around a little to be about the size of the salmon, then put a salmon fillet on the beans, then sprinkle a little salt and pepper on to salmon, next cover salmon with more of the beans. and wrap up the foil to seal it all in, grill about 20 min flipping once. serve over rice
It was so good. And I used the extra bean stuff for dip with corn chips on sunday.
