I made these last night and they are great especially if you are grabbing something quick on the way to work or for when you get there.

4 eggs
1c pure egg whites
4oz. lower sodium turkey or ham lunch meat (chopped)
1/2c reduced sodium cheddar cheese
1/2 onion chopped
black pepper to taste

Mix it all up.
Spray a mini muffin pan with cooking spray, or a regular one it will just change the portion size (12 instead of 24).
pour mixture into muffin tin and bake at 350 degrees for 20-30 minutes, until they start getting a little color on top.

When this recipe is broken down into 24 mini muffins each one is 33 calories.

Edit: any kind of fresh veggies added in would be good too.

I had three for breakfast this morning, they are delicious.

    This sounds like a great idea. They would be so handy instead of having to cook every morning. Hmm, already thinking of the possibilities. Thanks for sharing!
