Cooked oil vs. Uncooked...any scientists?

OK, if I roast veggies with olive oil, does it all get absorbed into the veggie, or does some of it evaporate? Does its calorie content change?

I'd be curious as to the answer too...but I use the whole calories myself.0 -
Not sure if it absorbs or evaporates. But I would log all the veggies AND the olive oil. SO you're not missing anything!0

o is get a spritzer and use far less olive oil. any cook store will have them

Yeah, I've been using lots of 0 calorie olive oil spray. I guess I'll have to give up some of the full flavor for a while0
