So I'm looking for something new to make for dinner tomorrow night... here's what i have in my pantry...
couscous
diced tomatoes
chicken/vegetable broth
and in the fridge...
tofu
a bunch of marinades
lots of frozen veggies
anyone have a clue on what i should do?

Stir-fry! Marinade the tofu in whichever marinade sounds good to you all day tomorrow, then stir-fry with veggies.
Make couscous with veggie or chicken broth as your liquid, and add diced tomatoes at the end.
Easy-peasy.0 -
well if you don't want to get anything at the grocery store and just work with what you have...I'd say cook the couscous, using chicken broth instead of water, then add marinated tofu, diced tomatoes, and frozen vegetables to have a lovely well rounded meal...sort of a couscous casserole!0

Bake your tofu in marinade of choice. Drain your tomatoes and put on baking sheet, lightly spray with olive oil & add seasonings (garlic salt, italian seasoning, etc.) Saute your veggies in a small amount of veg broth and cook your cous cous (separately, of course). Once everything is done, combine it all.0
