Eggplant recipes anyone?

I love eggplant! Hate the oil it soaks up, too. I don't necessarily need the cheese on it, either so I can save calories. I came up with this way that was pretty darn good! Using home made sauce would be even better! I just thickly sliced the regular large eggplants and put them into a large saucepan with marinara sauce. I didn't even need any oil. Just added them all at once and made sure the slices were nicely coated during the cooking process. I also added some extra water and wine to the sauce so they could cook down and I wouldn't have to watch them so closely. I turned them occassionally and let them simmer away for a good hour or more and then transferred them to a large dish, covered them up and put them in the fridge to have for lunch the next day.

I couldn't believe how delicious they were! Eggplant has so few calories, too. If I can find more recipes that don't involve it soakin up tons of oil, I'd be in eggplant heaven!!
