I Heart PB&Honey Lunch Box (425 Cal w/pic)
Today's lunch had to be fast but that didn't mean I couldn't keep it delicious, low-cal and pretty. Keeping a theme simple (like hearts) goes a long way to making lunch more fun and interesting but also fast. This one took me about 10 minutes to throw together since I already had a couple shaped, boiled eggs in the fridge and I just got got my sauce containers, silicon cups and cutters in the mail. *squee*
But like with all my lunch boxes, you don't have to make it fancy. Just leave out the cutting of cute shapes and it'll go even faster.
1 Serving | 425 Calories
1 Boiled Egg (heart shaped if desired)
4 Cucumber Slices
1 Radish
4 Grape Tomatoes
1/2 cup Broccoli Florets
1 1/2 cups Romaine, chopped
1/4 cup crumbled Feta Cheese
2 Tbl Fat Free Italian Dressing
3 Strawberries
1/4 cup Blueberries
1 Fruit Leather Strip (or low-cal Fruit Rollup)
1 Slice Whole Grain Bread
1/2 Tbl Peanut Butter
1/2 Tbl Honey
Cut bread into heart shapes if desired. Spread with Peanut butter and honey. Cut fruit leather into heart shapes. Cut the cucumber slices into heart shapes if desired. Slice strawberries in half and combine with blueberries in a small cup. Slice radish. Arrange as pictured.

I usually hide them under other parts of the lunch box. The fruit leather scraps were under the sandwich. The veggie scraps were under the lettuce.
I ate the bread scraps >.> but I probably would have put them under the sandwich too.0 -
How did you make the hard boiled egg into a heart?
You use an egg mold (I got mine from Amazon). After you boil the egg, peel it while it's still hot, put it in the mold and clip it shut. Then stick in the fridge or drop in ice water for 5-10 minutes or until it's cool and it will hold the shape.
I've used these before and they work really well but you definitely want to use large/extra large sized eggs.

There are two kinds, pig and fish shapes. The fish ones are smaller and are for things like soy sauce. It holds about 2 tsp. The pig is for slightly chunky sauces and salad dressings and each will hold about a Tbl.0 -
