Roasted Cauliflower Nomssssss!!

I am craving this sooo bad. Got the recipe from a famers market customer while looking at a batch of enormous white and purple cauliflower.

Take however much cauliflower you want and slice it into 1" flat slabs. Spray a baking sheet with oil spray and arrange cauliflower on pan in a single layer (I squished it all in because I didn't have more than one pan). Spray with oil spray and sprinkle with salt/herbs/spices/etc. I did a light sprinkle of kosher salt and fresh ground black pepper. Place in preheated 400 degree oven and bake for 30 minutes. The cauliflower will be cooked through, the edges carmelized and crispy. Try it! It's so simple, and low in calories!

    Mmmmmm!! I often roast veggies - but hadn't thought about roasting cauliflower!

    Yum, I make this out of my biggest loser cookbook, you cut up the cauliflower, sprinkle EVOO, parm cheese, and garlic powder, and S/P.. Back in oven at 400 for like 10-20 minutes... very good!

    Sometimes I toss garlic, mushroom and peppers in too. Yummy with brown rice!
