Cheap Fast and Easy

I am looking for recipes that are cheap fast and easy, as well as low calorie and tasty. I figured I can start with one of my favorites:
Chicken lo-mein
4 oz. spaghetti, broken in half
6 oz pre-cooked grilled chicken breasts, cut up
1 12 oz. bag california style vegetables
6 tbls teriyaki marinade and stir-fry sauce, divided
Cook pasta according to package directions. When you add pasta to water, place chicken, veggies, and 2 tbls sauce in a non stick skillet over medium heat, when it starts to steam, cover. When pasta is finished, drain and add to veggies, along with remaining sauce. Turn off heat.
Makes 2 servings 360 calories each

Soba noodles
1 can chick peas
Broccoli
1 can tomatoes
garlic
olive oil
Cook the soba noodles to directions
Sautee the broccoli in the garlic and olive oil for a few minutes then add in the tomatoes and chick peas.
Serve with soba noodles.
I hate to cook, and I am not particularly good at it, but this recipe is super quick and fool proof. Its also cheap.

We love baked goods in our house so here is one I came across for muffins. It has all normal items in it which you should already have in the kitchen.
Preheat oven 350.
1 cup skim milk
1 egg
2T low fat margarine
1/2t butter flavoring
2 cups all-purpose flour (or sub wheat flour)
3t sugar (or sub Truvia)
2t baking powder
1/2t salt
Spray 12 cup muffin pan with fat free cooking spray. Mix milk, egg, margarine, and butter flavoring in bowl. In seperate bowl mix flour, sugar, baking powder, and salt. Fold dry mixture into wet mixture just until it is mixed. (Don't over mix) Bake for about 30 minutes.
Calories per muffin: 99 *Add 3/4 cup fresh berries for 30 more calories.
Fat per muffin: 2g
Protein: 3g
Carbs: 17g
Sodium: 204mg0
