Lentil, Barley, and Sweet Potato Soup (Super high in fiber,

Hey Everyone I made this recipe a few times now, and I LOVE it. It is such a "meaty" soup, that you don't even notice it is vegetarian!

1 Tbsp Crisco Vegetable Oil
2 Stalks Celery, chopped
1 onion, chopped
1 (approx 14 ounces) Sweet Potato, peeled and diced
1/2 cup Pearl Barley
1 1/4 cups Lentils
2 tsp Dried Oregano Leaves
2 tsp Dried Basil Leaves
1 Tbsp Dried Parsley Leaves
3 Tbsp Tomato Paste
2 Tbsp Balsamic Vinegar
6 Cups Reduced Sodium Vegetable or Chicken Broth

Heat oil in large pot over medium. Add celery, onion, and garlic, and cook, stirring for 5 minutes or until softened. Add sweet potato, barley, and all herbs. Stir to coat well. Add tomato paste and vinegar and stir to combine. Add all broth, and bring to a boil, Reduce heat; cover and simmer for approx 35 minutes, or until the grains and potato are tender.

Makes 8- 1 cup servings

Here are the nutritionals based on a 1 cup serving:
Cal 163, Fat 2.2, Sat 1.3, Poly .2, Mono .1, Chol 0, Sod 550, Potassium 705.9, Carb 30.1, Fiber 20.1, Sugar 3, Protein 7.3,
Vit A 144%, Vit C 8.4%, Iron 12.9%, Calc 4.9%
