Chinese coleslaw

I've been making this for years after eating it at a friend's house. She made it with cabbage, roasted almonds and chinese noodles and tons of sugar in the dressing. I've adapted it to be diet friendly.

1 bag chopped cabbage for coleslaw (you can buy in most produce sections)
2 green onions chopped
cranberries (optional - my kids don't like them)

dressing:

2 Tbsp canola oil
7 Tbsp vinegar
2 tsp sugar (instead of 6 Tbsp in original recipe)
2 packages sweetner
1 tsp salt
1/4-1/2 tsp pepper

Shake up dressing well in a jar until sugar dissolves and pour over salad. Eat right away so the cabbage is crunchy.

  • Try putting in a little Chinese sesame oil. It gives it a wonderful flavor. eg: 1 tsp. and deduct 1tsp. of canola oil.
