This was another win! I am going to try these again with "cookies and cream" protein and make a topping of sugar free cool whip and cream cheese.
The fat content is high but it's about 75% MCT Oil and only 2 carbs per bar.
Very quick and easy, no bake, low carb peanut butter fudge bars.
Makes 9 Large Bars
Ingredients:
7 scoops of chocolate protein powder
1/2 cup of PB2 Powder Peanut Butter
1/2 cup of expeller pressed coconut oil
4TBSP of Low-fat cream cheese
1/2 cup egg beaters
Directions:
In a large mixing bowl, combine dry ingredients and mix together with a fork.
Warm coconut oil to a liquid in microwave for about 20 seconds
warm cream cheese in microwave about 20 seconds
Add the oil, eggs, and cream cheese to dry mixture and combine by hand with a wooden spoon or spatula.
This is a bit of a forearm workout, mix for about 2-3 minutes.
Place wax paper in a small square pan and spray with non-stick spray.
Pour mix into pan and form with a spoon or spatula
Let your fudge cool in the refrigerator about 30 minutes.
Cut into 9 equal squares and enjoy.

233 Calories
16 grams of fat (Mostly from MCT’s in the coconut oil)
2 Carbs!
20 grams of protein
These make great snacks, desserts, or even a quick breakfast.
