Key Lime Salmon with Faux Mashed Potatoes

Ingredients for Key Lime Salmon:

2 Key Limes
1/4 tsp Dill Weed
1 tsp Minced Garlic
Nonstick Cooking Spray
1/2 Tbsp Extra Virgin Olive Oil
1/2 Tbsp Capers
1 Tbsp White Cooking Wine
6 oz. Salmon Filet (Prefferably Wild)
*Quart size Ziplock Bag

Quarter both key limes & set 2 wedges aside. Place Salmon filet in ziplock bag. Juice 6 wedges of key lime into the bag (also placing the juiced wedges into the bag). Toss 1/4 tsp of Dill Weed & a tsp of minced garlic into the bag. Seal it and shake generously, making sure to coat salmon with the mixture. Let it marinate in bag for an hour or longer inside of fridge.
After marinating salmon, cut out enough foil to place salmon inside & have room to make a sealed tent over it. Preheat oven to 375 degrees. Lightly spay foil with nonstick cooking spray. Lay salmon in the middle of foil & drizzle salmon with 1/2 Tbsp of olive oil, 1 Tbsp of cooking wine & 1/2 Tbsp of capers. Bring up sides of foil paper, folding them together, making a tent over salmon so the heat can circulate. Bake at 375 degrees for 18 - 20 minutes, or until fish flakes easily with fork. If you like the top of the salmon a little toasty, after fully baked, peel open the tent & heat oven to broil and allow salmon to broil in 1 minute intervals until desired finish. Serve salmon with 2 fresh key lime wedges & Faux Mashed Potatoes.

Ingredients for Faux Mashed Potatoes

2 cups Raw Cauliflower Florets
Zero Calorie Buttery Spray
Galic Powder, Salt & Pepper to taste

Steam Cauliflower Florets until soft. Blend cauliflower florets in a blender or food processor until smooth. According to your temperature preference, you may need to warm them slightly in microwave, as blending causes them to cool down slightly. Top with buttery spray, garlic powder, salt & pepper to taste. Serve with Key Lime Salmon & dinner is READY! Enjoy!
