Healthy Casseroles?

We really are a casserole family, but I am bummed by the ingredients in our casseroles (tortillas, cheese, cheese, more cheese)...

Does anyone have any healthy casserole recipes they would like to share?

    Try this bean casserole


    Ingredients
    1 Tablespoon of olive oil
    2 stalks of celery
    1 medium brown onion
    1 medium carrot
    2 cloves of crushed garlic
    2 tablespoons of tomato paste
    400g can crushed tomatos
    1/2 a cup of vegetable stock
    1/2 a cup of water
    2x400g beans. (I use 1 mexican chilli and 1 five bean mix)
    1/2 a cup of parmesan cheese (optional

    Directions
    1. Heat oil in large saucepan, cook celery, onion, carrot and garlic, stirring until and onion softens. Add paste and stir for 1 minute. Add undrained tomatoes, stock and water bring to the boil. Reduce heat and simmer covered for 35minutes.
    2. Add beans, simmer covered for 10mintues. Serve and sprinke parmesan.

    Serve with Rice, or enjoy on it's own

    There is a really nice line of recipe books from the american heart association called One Dish Meals which is mainly casseroles. I love it and use it all the time. Check it out!
