low carb cheesecake cups YUM!!

8oz room temp cream cheese
2 lg eggs
1/2 c heavy cream
3 packets sugar sub
1/4 t almond extract
1/4 t lemon rind or 5 crushed raspberries

heat oven 325
place 4 6 oz custard cups in large raosting pan

process all cheesecake ingredients in food processor
pour into custard cups
fill roasting pan withwater so it comes 1/2 way up sides of custard cups
cover pan with foil
bake 30 min
turn oven off and leave in oven for 20 more min
remove, uncover, cool completely and cover with plastic wrap and chill in fridge until chow time!

they are so yummy and low carb too

5 net carbs if you follow the recipe, but sometimes I leave out the 3 packets of splenda and use 1 truvia and it may save a carb or 2. Also if you use that neufatchel cheese it saves a carb or 2

    I made something similar the other day except I only used fat free cream cheese and no heavy cream...I also used almond flour and a little butter to make a low carb crust. YUMMY!

    This recipe sounds delish.

    I do my own version of low cal cheese cakes I use Greek yogurt and sugar free fat free cheese cake pudding mix and a little vanilla, yumm!
