Fajita Chicken & Black Bean Layered Casserole
Options
2 large cans Low Fat Chunk Chicken (drained)
2 cans Tomatoes with Green Chilies (drained)
2 cans Seasoned Black Beans (drained)
1 packet Fajita Seasoning
6 Low Fat Flour Tortillas (8")
4 cups Low Fat Mexican Style Shredded Cheese
Fat Free Olive Oil Non-Stick Spray
Fat Free Sour Cream (optional)
Preheat oven to 350 degrees.
In a large pan, combine chicken, tomatoes/chilies, beans, and seasoning and bring to a low boil.
Remove from heat and set aside.
Spray a 9x13 glass baking dish with non-stick spray.
Tear Tortillas into strips about 2 1/2 inches in width.
Line 2 tortillas worth of strips across the bottom of dish.
Spoon in 1/3 chicken mixture evenly over the tortillas.
Sprinkle 1 cup of cheese evenly over chicken mixture.
Continue layering in this order two more times, ending with 2 cups of cheese on top.
Bake 25-30 minutes, until cheese is bubbly.
Top each serving with a tbsp of sour cream (optional).
Makes12 servings, each with 300 calories & 8 fat grams.
