Making a big pan of roasted veggies is wonderful. Good roasters are- cauliflower chunks, green beans, whole mushrooms, zucchini slices, asparagus... toss 'em with some olive oil, salt, pepper and garlic and put on a sheet tray in the oven at 400 'til they brown. Enjoy hot or room temp. Great as a side or in salads, good to have around to grab quick when you're starving all of a sudden.Yum!

    Some of my basics:
    Bagel Thins
Hummus (or the ingredients to make my own)
    Greek Yogurt
Frozen Veggies (I live alone, so this is easier, cheaper, and I don't throw so much away)
    Granola or fiber plus bars
    peanut butter (no sugar added)
    sugar free jam

I like to marinate chicken breasts in fat free italian salad dressing. Yummy! Couscous is also a great staple that's not high calorie, but very filling.

Oh yum! thanks everyone! you are giving me some great ideas!!! Keep them coming! Also... I have an issue with yogurt... I have texture issues with it, but i also dont like what I call the "bacterial tang" that it has. Does anyone know how to overcome that? If possible?

I used to have a big issue with the texture of yogurt, too. I started adding Grape Nuts into it and that helped a lot. Granola also works well.

    Thomas Bagel Thins
    Low fat cheddar cheese
    Canned albacore tuna
    low fat mato
