I am running low on groceries, what are you having for dinner this evening? Any suggestions??

I got a rainbow trout for 83p from tesco fresh fish counter so I had that baked with lemon and dill and some homemade bruschetta (wholewheat pitta and chopped onion, tomato, garlic and basil) and green salad.0

No idea... I wanted my hubby to make chicken ( I am still trying to figure out how to make it 'right', lol) but he is really busy doing work stuff today....Maybe something simple here like fish sticks and veggies??? LoL0

Zucchini, Yellow Squash & Spinach sauted in a little EVOO, with garlic & onions, and Roasted Chicken. Yumm-O :happy:0

Im haveing bbq chicken breast on the grill, corn on the cob, baked potato
wheat roll , tomato cucumber vinager salad and sugar free jello with
fruit for dessert.0 -
Ate out today so keeping dinner light with a turkey sandwich and a couple cheese nips.0

Turkey burgers with caramelized onions, apples and cheddar cheese along with homemade sweet potato fries and a side salad..yummy!0

Baked or broiled tilapia with homemade low sodium salsa, brown rice, corn on the cob (maybe), broccoli & cauliflower, and fresh fruit & vanilla yogurt for dessert.0

Homemade chicken Fajitas on 100% whole wheat tortillas0

Balsamic roasted chicken thighs, whole wheat pasta and the veggie is still a toss up at this point.0

I actually had a 6" Turkey & Bacon Avocado on Wheat with no cheese. A little high on the sodium but I am not over...that's is the only downfall of that sandwich is the sodium intake but it is really good.0

Just for a future idea, the next time you make baked or pan cooked (notice I didn't say fried) chicken, make an extra piece to save for a lunch or dinner when everyone else is eating something you don't want. I frequently make seasoned chicken in a pan with a bit of extra virgin olive oil (EVOO) and save a piece for a busy night or to put in a salad for lunch with some healthy italian dressing. It's so yummy!0
