Delicious Lunch Snack!

I just made the most delicious snack, at around 350 calories per serving!
Serves 2:
Ingrediants -
2 Bacon Rashers
Rocket
2 Garlic Cloves
1/2 Teaspoon of Chili
1 Teaspoon of Tomato Paste
2 Flatbread
1 Medium Tomato
1 Large Mushroom
1/2 Red Onion
2 Eggs
First put a little olive oil in a pan, once hot add chili and garlic and leave the flavours to infuse for a couple of moments.
Add finely chopped tomato and onion, sauté on a low heat before adding mushroom
Whilst waiting for the above to soften, place flatbreads under the grill on a low heat
Once tomato, onion and mushrooms have softend add tomato paste and stir in until warm
Spoon mixture on to flatbread, sprinkle with grated cheese and replace under the grill to keep warm/melt cheese. (The flatbread will crisp around the sides, and stay soft in the centre)
Cook Bacon, once ready put to one side.
Boil water and add eggs (crack in bowl then slide the eggs into boiling water)
Whilst the eggs are poaching (it takes about 2 1/2 minutes to make the perfect poached egg...yum!) remove flatbreads from the grill top with bacon, add rocket to taste, place poached egg on top and season with salt and pepper.
So absolutley delicious, I just had to share!!
