High Protein, High Fiber, Low carb, low sodium lunches...any

Ugh...I really need to get to the grocery store so I'm not stuck like this every day for lunch....any ideas???

I make my own lunchmeat. I put 3 large (not frozen) chicken breasts in water in a crock pot and let it go all day on low. Come home and shred it, and it's a great high protein, low fat lunchmeat. You can combine it with some good whole wheat bread and get your fiber too.
Most other lunchmeats are so full of sodium that I really don't want to consume them. This is easy and very good.0 -

you can check my diary... I tend to have a hard boiled egg and cottage cheese for breakfast and then at lunch I'll have PB2 on a whole grain 1/3 less calorie english muffin and a banana.0

About a week. 3 large breasts are my lunches for the work week. It's fairly inexpensive too. The more expensive fresh large breasts cook up better. I couldn't get the frozen ones to shred nicely.0 -

You can rapid boil them in a large soup pot as well. Put it on high with a lot of water (make sure you check the water levels periodically) and it should be done in about 1-2 hours. It should shred really easily with a large fork.0 -
I went for two lettuce wraps with low-sodium ham, havarti cheese, avocado, and spicy mustard! And a greek yogurt! It was delicious and very filling! I'm trying very hard to up my protein levels!0
