HG's Snazzy Southwestern Breakfast Tostada

1/2 cup southwestern Egg Beaters with yolk
1 small high fiber flour tortilla
1 oz (about 1/4 cup) shredded fat free cheddar cheese
1 tbsp. salsa
1 tbsp fat free sour cream
Bring a small pan sprayed with nonstick spray to medium heat.
Pour in Egg Beaters, and scramble, stirring while you cook.
Once cooked, top with cheese, reduce heat to low, and cover.
Cook for 1 minute longer to melt cheese.
Meanwhile, toast tortilla until crispy.
Top tortilla with your cheesy scramble.
Finish it all off with salsa and sour cream. Enjoy!

1 cn No Salt Added Tomato Sauce
1 Chili Pepper
1/4 c Red Wine Vinegar
1/2 c Onion,Chopped
1 t Minced Garlic
1 1/2 t Cilantro
1/2 t Oregano
1 1/2 t Cumin
Combine all ingredients in a large pot. Simmer until desired thickness, about 15 minutes. pack into jars and store in refrigerator. Makes about 3 pints.
