HG's Snazzy Southwestern Breakfast Tostada

1/2 cup southwestern Egg Beaters with yolk
1 small high fiber flour tortilla
1 oz (about 1/4 cup) shredded fat free cheddar cheese
1 tbsp. salsa
1 tbsp fat free sour cream


Bring a small pan sprayed with nonstick spray to medium heat.
Pour in Egg Beaters, and scramble, stirring while you cook.

Once cooked, top with cheese, reduce heat to low, and cover.
Cook for 1 minute longer to melt cheese.

Meanwhile, toast tortilla until crispy.
Top tortilla with your cheesy scramble.
Finish it all off with salsa and sour cream. Enjoy!

You can reduce the sodium by going with original Egg Beaters and find low sodium salsa or just make your own salsa.

Here is a low sodium salsa recipe:

3 lb Plum Tomatoes,Peeled And Chopped
1/2 c Black Beans,Cooked
1/2 c Frozen Corn
1 cn No Salt Added Tomato Sauce
1 Chili Pepper
1/4 c Red Wine Vinegar
1/2 c Onion,Chopped
1 t Minced Garlic
1 1/2 t Cilantro
1/2 t Oregano
1 1/2 t Cumin



Combine all ingredients in a large pot. Simmer until desired thickness, about 15 minutes. pack into jars and store in refrigerator. Makes about 3 pints.

Yield: 48 Servings

    Yummy that sounds good.

    The stores here are terrible though. I cannot find fat free cheddar cheese or any Weight Watchers products and a limited selection of the 100 calorie packs

    Does anyone know how I can get Weight Watchers food???
