Cooking in a toaster oven?

I'm going out of town for work in a few days for almost two weeks. Staying in a hotel with a cooktop & toaster oven (yay) and that means I don't have to eat out every night. Does anyone have some good tasing, low calorie, easy-to-cook at 7pm recipes they'd like to share?

toaster oven rules!
grab some plain bagels or hamburger buns / english muffins and get your optimal pizza toppings, they cook up splendidly in a toaster oven!
I've not found "Anything" that I can make in an oven that I can't do in a toaster-oven... baked chicken breasts in them at work where it was either food-court lunches or toaster-oven prep for better quality food.0 -
My favorite breakfast - and really, this would be yummy anytime:
Take an English muffin and toast it
Poach an egg
Put a slice of cheese on the English muffin so it gets melty
Throw the egg on
nom nom nom
You could put Canadian bacon on it too, tomato would be good, etc.0 -
Pretty much anything you can cook in a regular oven, you can also cook in a toaster oven, as long as you can fit it all in there. You could easily bake a piece of chicken breast or fish. Microwave a sweet potato and some frozen spinach, and you got yourself a great dinner.0

Buy the low carb whole wheat wraps at the grocery store. They taste awesome in the toaster oven. You can make a wrap out of anything. Veggies, cheese, eggs, lunch meats, veggie burgers, tuna... The list goes on and on.0

I use my toaster oven way more than my regular one. I love Trader Joe's mini pizzas (bambino pizza formaggio), which are easy to cook, perfectly portioned, and only 250 calories. I've also used it to bake sliced yams or veggies with olive oil/rosemary.0

OMG love to make bagel pizzas in mine...plain bagel, small jar of ragu pizza sauce low fat mozzerella black olives or mini pepperoni yum yum

My fav toaster oven lunch: Take left over tuna salad and put on top of sliced whole wheat bread. Top with a slice of cheese and toast. TUNA MELTS! Love them!0
