    I have tofu scrambles regularly. They are a lot like eggs. You can just add whatever you want (my favourite is broccoli, but many people add veggie bacon or non-dairy cheese they like). A basic recipe: 1/4 block firm tofu, drained and pressed free of excess moisture. Crumble, then stir into a mixture of nutritional yeast (1 Tbsp), garlic powder (1 tsp) and/or other spices. Chop up other veggies/ingredients. Fry until lightly browned over stove. It's similar to eggs, although not identical, and has the benefits of being low calorie, high calcium, high protein, and cholesterol free.

    Tofu can be made to take on almost any texture or flavour, so there are many ways to prepare it. Mess around until you figure out what you like. As for dairy, try substituting soy or rice cheese instead. If you're looking for something that tastes great and melts well, try the new Daiya cheese products. Soy or almond milk is awesome, but if you have trouble getting used to the taste, get the vanilla flavoured stuff. It's easier to adjust to.
