It's National Pancake Day. (IHOP honors the holiday in February. Sorry, IHOP -- you're outnumbered on this one.) This is exciting, people. 'Cuz we're helping you celebrate. Get ready for a guilt-free FLAPJACK FRENZY!

Boxed and ready to rock your socks...
Fiber One Complete Pancake Mix - When they say complete, they aren't kidding! All you have to do is add water... THAT'S IT! (Okay you do have to cook 'em in a pan, too.) A half-cup of the mix will make about three pancakes, which will amount to 180 calories, 3.5g fat, 36g carbs, 5g fiber, and 6g protein (POINTS® value 3*). We knew we could count on you, Fiber One. This mix is brand-new but SO worth tracking down. If it's not on the shelves at your local market yet, DEMAND IT.
Aunt Jemima Whole Wheat Blend Pancake & Waffle Mix - Here we have super-low stats and a pretty impressive amount of fiber -- 1/4 cup of the mix makes about three 4-inch pancakes and contains 120 calories, 0.5g fat, 26g carbs, 3g fiber, and 4g protein (POINTS® value 2*). Not bad for a pancake b-fast that's ready in minutes and requires no cleaning of a mixing bowl, pan, and spatula!
Dr. Praeger's Potato, Spinach, Broccoli, and Sweet Potato Pancakes - Don't panic. These pancake flavors are NOT mixed together to form one wacky flavor combo -- they are four separate varieties! And yes, we know these are NOT breakfast pancakes like the others in this email, but we like them, and they ARE called pancakes. Each one contains 80 - 100 calories, 2 - 4g fat, 9 - 13g carbs, 2 - 3g fiber, and 2g protein (POINTS® value 1 - 2*). Our pancakes came out a little thin and flat, but this item is too much fun to pass up.

Tips & Tricks for a Pancake Fix

* Eggs, oil, full-fat milk... who needs 'em? Get creative with your boxed mixes. Experiment with fat-free liquid egg substitute, Unsweetened Vanilla Almond Breeze or light vanilla soymilk, fat-free cottage cheese, canned pure pumpkin, and no-sugar-added applesauce. If that sounds intimidating, just follow our recipes below!
* Bulk up your pancakes by stuffing 'em full of fruit. Try berries, chopped apples, mashed banana, and more! Strawberry Banana Flapjacks, anyone?
* When it comes to condiments, keep it guilt-free -- or your pancakes will get weighed down and so will you! Use nonstick spray for cooking and spray butter for topping. Go for sugar-free pancake syrup -- "lite" ones still have around 100 calories per 1/4 cup, but sugar-free ones top out at 35. And, if you crave a mountain of whipped topping, make it Fat Free Reddi-wip!
