Eggplant mini-pizzas

There seemed to be some interest in this, so thought I'd share with the whole class :wink:

Slice an eggplant into 1/4" thick slices, brush with a bit of olive oil, bake at 400 for about 30 minutes (flip once). They'll get kind of chewy....

Top with a bit of sauce and whatever toppings you want (my fave is italian sausage & mushrooms), then the cheese (I prefer provolone to mozzerella).

Put them back in the oven for about 10 minutes and presto!

    and these are AWESOME and VERY FILLING! I used black olives, mushrooms and shredded leftover chicken!

    I may top these with ricotta marinara and mozzarella as an easier version of the eggplant and squash lasagna I've been making, and yes with portabellos would be yummmm too!!!
