Breakfast Bruschetta

I love to watch $40 A Day w/Rachael Ray. This is one of the recipes from a restaurant in New York City. YUMMY!!! :happy:

8 Slices Tuscan Style Bread
12 Eggs
¼ Cup Water
1 tsp Kosher Salt
¼ T Red Pepper Sauce
1-oz Unsalted Butter, Sweetened
5 ½-oz Goat Cheese, Softened
1 ½-oz Marinated Sun Dried Tomatoes, Julienned
Fresh Basil

Toast bread; whisk eggs, water, pepper sauce and salt in bowl until smooth. In large pan, melt butter; add eggs stirring with spatula until eggs are gently scrambled. Spread goat cheese over toast. Add scrambled eggs on top of goat cheese, cut each of the toast slices in half. Put 4 halves on each plate, garnish with sundried tomatoes, basil leaves, and drizzle with pesto.

Serves 4

    Actually it's not too bad. If you're like me, breakfast is my largest meal. Right now I have to burn at least 402 calories, I always go over that. Eat it on a morning you're going to do some heavy duty cardio. It's very light so you shouldn't have that weighed down feeling during your workout.
