Chicken Florentine-ish

This has been a staple in our house for quite some time. I created it one evening so that after we went out for a walk, it'd be ready.
2- 10 oz bags of Spinach (It will look like A LOT)
8 cloves garlic
chicken breasts
olive oil
parmesan
salt/pepper
Put the spinach in a casserole dish (mine is about 10x10 and 6" deep)
Put the garlic cloves in (I use them peeled, but whole, and just make sure they aren't all in one clump)
Put the chicken breasts on top of the spinach. You can use 1 for each person, or if you're like me and like leftovers, use however many will fit in a single layer.
Drizzle olive oil over the whole thing, salt and pepper.
Bake at 350 for about 25 minutes (a bit longer if the chicken is frozen). Sprinkle parmesan over the top, and put back in the oven for just a couple minutes to melt.
There are a ton of variations to this... you can add bacon crumbles, tomatoes, mushrooms, red bell peppers, etc - but this is the most basic version that I've ALWAYS got ingredients on hand for.

Depends on how much of everything you use, I suppose (and how much of it you eat). My rough calculations, based on 2 bags of spinach, 4 chicken breasts, 5 Tbsp of grated parmesan, and 2 Tbsp of olive oil would be 1088 for the whole recipe. So, *about* 270 per serving...this will be tonights dinner! quick and easy! Love it!

Delicious! I made a single serving for myself because my hunni wants bbq chicken LOL but it was very very good! Next time I'll add some brocoli florets and a few mushrooms!0
