Weighing More During the Week?

So, I've been at this since January, I think...at it really hard since March. I've lost around 25 lbs since MFP, and almost 40 total. However, I'd like to be losing more...upwards of 2 lbs a week (please, no lecturing!).

I'm having a problem. I work out, but not nearly as much as I should. I would say I'm fairly lucky to be losing almost 1.5-2 lbs a week, considering how little I actually do. I'd say I get in maybe two or three workouts a week at 2.5 miles per workout at an average of 3.5-4 mph. Lately, I've been stepping my game up and running (I've run my first sprint since 2006!), but not for as long of a period of time....maybe 30 minutes a day. I'm babbling, let me get to my issue.

During the week, I will weigh in at about 196-198, depending. I weigh myself every day at 7:30 a.m. after I go to the bathroom. On the weekends, I'll usually drop a good 1-3 lbs. When Monday rolls around, I'm 5-6 lbs heavier. That weight will stick around until the weekend, and then I'm down 1-3 lbs again. Now, maybe it's my weekend regimen, or the way I eat, but honestly, I don't see any reason for weight to fluctuate like that.

My weekends consist of:

Friday - Work 8:00 a.m. to 5:00 p.m. and out 9:00 p.m. to 3:00 a.m. (I maybe have one or two shots, I drink water most of the night - probably 5 or 6 bar-sized cups).
Saturday - Wake up around 11:00 a.m. - diet is usually crap food, i.e. fast food, pizza, etc. I eat well all week, but the weekends I usually slack off. Out again from 9-3. Water all night. Saturday is usually when I drop the most weight.

As soon as I wake up Monday, it's like all of my weight is back. I don't know what the hell is going on!! However, it's making me want to work harder at my exercise, because I can't stand being so counterproductive!
