Black Bean Lasagna Rolls
8 lasagna noodles, cooked according to package
1 cup reduced-fat Monterey Jack cheese, shredded
1 15-oz container part-skim ricotta cheese (I only had cottage)
1 4.5-oz can chopped green chiles, drained
1/2 teas. chili powder
2 cups drained canned black beans
cooking spray
1 jar salsa
fresh cilantro sprigs (optional)
Combine cheeses, chiles, and chili powder. Spread over one side of each noodle. Spoon black beans evenly over cheese mixture. Roll up noodles, jellyroll fashion, beginning at narrow ends.
Place lasagna rolls, seam side down, in an 11x7" pan coated with cooking spray. Cover and bake at 350 degrees for 25 minutes or until heated through.
Spoon salsa over rolls before serving, garnishing with cilantro sprigs, if desired.
