Cooking for two

I was just wondering if anyone has any suggestions when it comes to cooking for two. My boyfriend and I work different hours and I like to wait until he gets home from work so that we can eat together. However, this usually means eating dinner around 8 at night. I am starting to adjust to the idea of cooking and then making a plate for him to eat when he gets home but I feel bad that he would always be eating leftovers. Any advice? Thanks in advance!!!

    I'd try to have my lunch a little later and and afternoon snack at around 5pm so that you're not too hungry to wait for him at 8 if it's important that you eat together. I think it's a good thing! Families don't eat together anymore...

    I agree, it's important to have that time together, besides when I'd eat first and save some for hubby (he worked nights and second shift for a while) I'd end up eating some of his later too. BUT, if your asking what I think your asking for dishes that are good leftover.. there's lots really -- meatloaf, spaghetti sauce (better heated up in my opinion) really any kind of stew, soup or casserole!     If you can adjust your eating schedule to make it easier to eat late that would work but you also probably want to consider eating that late cause it could affect your weight lose goals.
