"Diabetic" Father's Day Breakfast help??

So this father's day I want to make my dad an awesome breakfast! Sounds easy enough, but here's the problem. He's diabetic and his favorite breakfast meal is biscuts and gravey. My sister suggested steak and eggs, but I don't have steak or the money to buy him some! I was thinking about making some homemade whole-wheat biscuts??

If anyone has any ideas/recipes, please share :o)

    Sugar-free sweet potato casserole with an egg white omelet on the side?

    I am making a fritata. Basically brown a few turkey sausages and chop into chunks, sweat down some onion and peppers, and throw into some beaten eggs with a bit of basil, salt and pepper. You can add your choice of grated cheese on top then bake in a shallow pan for about 20 minutes at 350 degrees.
    We have made a lot of different variations of this, vegitarian ones, and my favorite, red onion, asparagus, and avacado (sounds odd but so good).
