Here is a wonderful recipe I cooked for my family tonight! It is so hearty, and I am still so full. We are a southern, Italian family that loves good food...and often times its not "good" for us. This is a great way to get the good foods we love and it be good for us too :)

Penne with Shrimp

Total time: 35 minutes

Ingredients:
1(16 ounce) package penne pasta (we used whole wheat penne, so the nutritional info will be based on without the whole wheat)
2 tablespoons olive oil
¼ cup chopped red onion
1 tablespoon chopped garlic
¼ cup dry, white wine
2 (14.5 ounce) cans diced tomatoes
1 pound shrimp, peeled and deveined (can get it from the frozen seafood section)
1 cup grated Parmesan cheese


Directions

1. Bring large pot of water to boil, add pasta and cook 8-10 minutes (using the whole box I cooked it for about 12 minutes). Drain
2. Heat oil in a skillet over medium heat. Stir in onion and garlic, cook until onion is tender. Mix in wine and tomatoes and cook for 10 minutes, stir occasionally.
3. Mix shrimp into skillet and cook 5 minutes, or until opaque. Toss with pasta and top with Parmesan cheese to serve.
