Refreshing Carrot Apple Slaw

The recipe I based my version off of originally called for walnuts or sunflower seeds which you can add and count the additional calories but I forgot to add them and I liked it just as well without!
This is for 8 servings (1 cup) with 62 cal, 14carbs 0g fat 2g protein 3g fiber (no nuts/seeds in this calc)

10.5 oz bag of shredded carrots

1 container, 0% fat Greek Plain Yogurt 5.3 0z

2 Granny Smith apples, chopped

juice of 1 lemon

1/3 cup dried cranberries

1/4 tsp vanilla extract

Toss the apples with the lemon juice and vanilla extract, and combine with all the other ingredients.
Leave in the fridge for at least 1 hr to meld flavors - this such also hold up overnight - I made it last night and ate it at work today!

    looks delish!

    reminds me of my lunch today (raw carrot, red cabbage and green cabbage salad). Will have to try this out... and soon!
