It is hot and I am looking for quick cool dinner ideas. Even if it's just a bunch of snacks. What is your favorite cool dinner meal on hot summer days?

    My favorite on a hot day is to make sandwiches or hoagies.... so as not to turn on the oven... and of course you have to have chips and pickles... :smile:

    We had some leftover grilled steak, so I sliced it up thin (cold) and put it on a big green salad w/ just a few gorgonzola cheese crumbles. It was very filling.

    Just about any kind of sandwich with some nice cold cantaloupe and sliced tomatoes!

    Mine is low sodium turkey taco meat on a lettuce salad.

    Potato salad and garden fresh still sun warmed green beans lightly steamed.. or tossed salad with dill:)
  • A big salad with cool refreshing veggies. Chicken, bacon bits and/or shredded cheese for protein. Boiled egg if I feel like taking the time. :smile:

    Or sometimes I just open a can of pork and beans and eat them cold right out of the can, with chips or crackers! :smile:

    Cucumber slices with white vinegar and chopped white onions. Add salt and pepper.

    Pineapple cucumber gazpacho soup. Blend a ratio of both 1:1 chunks of pineapple with cucumbers, add a bunch of celery, a bit of pineapple juice and 1-2 jalepenos. Add salt and pepper. I tried it from Whole Foods. Tastes GREAT!

    Sushi

    Personal Watermelon

    Massaged Kale Mango salad...google the name of the recipe with Aarti's Party (Food Network Chef). This is a staple in my fridge...always handy for a side dish, snack or for lunch. Tastes better the longer it's in the fridge.

    Hummus--Blend Chickpeas and tahini in a blender with lemon juice and olive oil. Add salt and pepper. Eat with carrots, celery sticks, and mini bell peppers. Another staple in my fridge.

    Red Quinoa...Add 1:1 ratio of quinoa to boiling water. Reduce to simmer...cook for about 15-20 min. Store in fridge. Eat with the hummus.

    Cocktail Shrimp...Make a sour cream/dill dressing or sour cream cilantro dressing in a blender. A different take on the cocktail shrimp.

    Fresh mozzarella balls with grape tomatoes and shredded fresh basil with drizzle of olive oil and balsalmic vinegar.

    mine is pretty simple and I like to have from time to time. A bowl of cereal. maybe some toast on the side.

    Get a rice steamer and make rice and peas with pot stickers - you still get hot food, but no oven and you're only over the stove for 5 minutes max. Potstickers are surprisingly low cal.

    Chicken salad with low fat Swanson canned chicken and olive oil mayo, pickles on the side and tomato slices on top. I like them on low cal English muffins. My best friend prefers crackers.

    Pasta salad made with olive oil and vinegar and lots of veggies - look on allrecipes.com.

    I particularly enjoy 2 slices of 98% Oven Roasted Turkey Breast on whole wheat with cheese, pickles, and a tad bit of mustard. I also like to add Turkey Bacon sometimes :) Weight Watchers also has this strawberry smoothie popsicle that is delicious! Or you can't go wrong with a nice big salad.
