healthy alternative???

Hi! Well I'm making a broccoli cheese and chicken cassorale and I was wondering if there are any healthier alternative to cream of chicken?? Thanks!

    Maybe just nonfat or lowfat version? Unless you already are using that...

    You could try a LITTLE bit of chicken broth and some low fat milk.

    I believe you can get (almost) fat free cream of chicken. It's the "Campbell's Heathy Request" kind.

    Soymilk, lemon juice, balsamic vinegar, and chicken broth.

    I just came up with that off the top of my head... I have to improvise on recipes all the time. Usually it works out really well.

    I haven't run the recipe on this one yet, but my mom uses this because she is watching her blood pressure.

    2C Instant nonfat powdered milk
    3/4 C cornstarch
    1/4 C instant low sodium chicken bouillon
    2 Tbsp Dried onion flakes
    1/2 tsp dried, crushed basil
    1/2 tsp dried, crushed thyme
    1/2 tsp pepper
    Mix all ingredients together; store in jar with tight lid. Combine 1/3 c of mix with 1 1/4 C of water in saucepan. Cook and stir until slightly thickened. Use in casserole, etc. Each 1/3 c of mix makes 10 ounces of soup. Use in place of bought canned soup.

    I ran the recipe through, and came up with the numbers. The recipe makes the same as 9 cans of soup which each can serves 2.5 people so total recipe serves 22.5 people.

    Per serving to compare to what is on a can of cream soup:

    Calories 39
    Carbs 7
    Fat 0
    Protein 2
    Sodium 33
    Calcium 8
