Easy recipe for your favorite whole foods vegetarian meal?

I've been making a switch to slowly work my way up to 90% plant based diet.
However I find that I really don't know, in spite of 25 years of being a vegetarian, how to make a variety of meals other than salad that are made up of veggies, fruits, nuts, and beans.
If you have a favorite recipe that is...
-mostly veggies or fruit (not potatoes)
-can have beans, nuts, or seeds
-can have small amounts of grain or none
-dairy could be a small ingredient or not there at all
-no oil, even olive oil
-no meat at all
...then please share with me. The easier, the better, because at this point while I'm making a change, it'd help.

This is an awesome recipe that I really enjoy for a nice clean salad during the summer. It's light and refreshing.
Ingredients
(Yield: 7 cups)
2 lbs.jicama, peeled and diced in 1-inch cubes
10 oz.mango
2 oz.freshly squeezed orange juice
2 Tbsp.salt
2 Tbsp.sugar (you can use splenda or agave nectar)
2 Fresh California Avocados*, sliced
5 oz.spicy peanuts
2 Tbsp.cilantro, chopped.
Serves: 6
Instructions
To Assemble:
1.Place the jicama, mango, orange juice, salt, and sugar in a large bowl. Mix to combine. Place about 1 cup of salad on each plate. Garnish each plate with the sliced avocado, spicy peanuts, and chopped cilantro. Serve.
* Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger avocados, adjust the quantity accordingly.0 -

that looks pretty yummy. nice site design, too. I've been vegan before, at one point for about 2 years. I'll probably be vegan again someday.0 -
I don't have recipes with me, but my favourites are indian dishes - dalh (made from red lentils with onion, ginger, garlic and optional coconut milk/baby spinach or other veggies) and palaak paneer - make your own paneer/cheese from whole milk and lemon juice and when it sets dice it up and serve in a simple spinach/tomato curry.

We like to have Taco Tuesdays at home. I fry some tofu cubes with some cumin and red pepper. Then we put whatever we want on it. Usually black beans, salsa, cucumbers, avocado, pineapple, cilantro, etc. If you don't want to use a taco shell then mix it in a bowl with some brown rice.0

Jicama is rather tasteless, but gives the crunch factor without the bad carbs. It sort of reminds me of a water chestnut.0
