Hello, new starter looking for support. (Scale won't budge?)

I've been on my current diet for quite a while, almost 2 months. However I've only decided to sign up on here yesterday. My starting weight was 54 kg (119 lbs), Now I'm currently 51 kg (112 lbs) and trying to get to 48 kg (105 lbs). I'm 5'1 ft tall.
Example of what I eat in a day: (mainly fruits and vegetables, little to no simple carbs and meat (excluding red meat) only once in a while (I eat tofu/eggs for my source of protein as a replacement of meat)
- 1 chicken breast with shiitake and portobello mushrooms (cooked with olive oil and garlic and pepper, no salt)
- 1 Navel Orange
- a glass of Grapefruit juice
- 1 Banana & 1 kiwi smoothie with soymilk
- 1 wholewheat toast
- Starbuck's double espresso with 1 equal sugar
- 1 boiled medium sized carrot.
I do however have a cheat day where I get to eat anything I want to once a week.
Exercise: I go to the gym 5 days a week, and take 2-3 cardio classes a day (Spinning / Body Combat / Body pump)
My weight has been the same (51 kg) for the past few weeks (I weigh myself once a week) I don't know if I've hit my plateau or if I'm gaining muscles or I'm not taking in enough calories (?) any advice would be greatly appreciated.
Please share your thoughts on how I can improve my diet and feel free to add me as a friend, I'm looking for inspiration, support and help.

Great Question and I am the same way. Feels like I'm working really hard and seeing very slow progress. I've be working out twice a day for an hour for the last three weeks. I have lost some inches, but no weight really...(6 pds). I don't know if I'm expecting too much. I have read that I may not be intaking enough calories at least 1200. Using the food and exercise log on this site shows that most days I eat less than 1200 or right at it...I'm not sure what to do either. Let me know if you get some good solutions.0

I would up your caloric intake a bit... you are eating on the low end of calories it seems and you're working out on top of that... your body is probably in shock from the change and needs you to bring in more fuel so it can burn it and make muscle to eat away fat.0

Don't rely on the scales any more. Start measuring yourself as it is more accurate in knowing whether you are still losing fat.0

It seems like your eating way too little for the amount you work out. MFP will be a great help so you can eat back your calories as when you don't track em, it can be sometimes hard to do!

How many calories per day would you say that you're eating? Weight loss is a funny thing, and everybody is different. With the amount of exercise you are doing, I would suggest figuring out if you're eating enough food to fuel your body through all of the cardio sessions. I have seen a lot of people who have upped their calorie intake and then began losing again.
I checked online, and it looks like you're at a healthy weight for your height. It might be your body telling you that you can't lose more weight. If you want more tone, up your protein intake and start lifting heavier weights.
