Darth Vadar Lunch Box (pic)
The Empire got jealous. The Rebels got a lunch box! Why not us? Okay fine! In this lunch box we have a Darth Vadar ham & cheese sandwich, a Stormtrooper egg, a Death Star rice ball and red and green lightsabers. Filling in the corners is a romaine salad, green bean/bean sprouts stir fry, and broccoli. Obviously this lunch would be just fine without fancy cutting or arranging but it all only took an extra 5-10 minutes and was worth the smile I got from my hubby. ~_^
2 Servings (1 pictured) | 500 calories ea
2 Sandwich Thins (4 slices)
2 Slices Cheddar Cheese
6 Slices Honey Ham
1/2 Tbl Light Mayo
1/4 cup Long Grain White Rice
2 Boiled Eggs
1/2 cup Green Grapes
1/2 cup Raspberries
1 cup Romaine, chopped
1-2 Romaine Leaves
2 Mozzerella Sticks
4 Olive Slices
1 cup Green Beans
1/4 cup Bean Sprouts
2 tsp Paprika
2 tsp Garlic Powder
Butter flavored cooking spray
1/2 tsp Soy Sauce
Nori (toasted seaweed) for decorating
Open the sandwich thins and spread one slice of each with mayo. Place two slices of ham & one slice of cheese on each sandwich. Carve darth vadar in the last slice of ham then place on top of the cheese. Trim the edges to make the rounds into square. Place the sandwich in the lunch box with both slices on the bottom so the darth vadar is exposed. (Hide the trimmings under the sandwich.)
In a bowl, toss together green beans, bean sprouts, paprika, garlic powder and a spritz of butter flavored cooking spray. Microwave for 2-5 minutes or until it reaches desired doneness. Use a lettuce leaf to separate the green beans from the rest of the lunch box.
Coat the rice in soy sauce to desired taste then form into two small balls. Add a circle of nori then add it to the lunch box. Make stormtrooper like-faces for each egg and add them to the lunch boxes too.
Slice the mozzarella sticks in half. Use a skewer or toothpick or even a strange of spaghetti (note the spaghetti will become soft and not stiff after a few hours) skewer several grapes then poke them into a cheese stick. Repeat for raspberries. Secure a slice of olive to each cheese stick using a piece of spaghetti poked through. Add to the box.
Place salad dressing in the bottom of a divided section of the lunch boxes. Add chopped romaine on top. Use Broccoli to fill gaps as pictured.

omg my husband wouldn't touch 2/3 of the stuff in there however.... he would love the theme...haha we had a starwars themed office in our old house.... he has hundredes of star wars collectables.... great job! Sooo creative!!!0
