How much is too much?

I'm in what feels like a never ending plateau...7+ weeks. I've tried a couple of things (increasing calories, watching carbs, increasing water). Something else that's been suggested is that I might be over training. So how much is too much?
I've had the same schedule since the beginning of June when I increased my workouts. The gym I go to rotates the class schedule monthly. I've been working out regularly since early Feb. Right now my schedule is:

Sun- Rest
Mon- 45 minutes Bootcamp, 1 hour Zumba
Tues- 45 minutes Zumba Toning (a slightly slower paced Zumba with light hand weights) 45 minutes Just Weights
Weds- Rest- sometimes a walk or something with my kiddos.
Thurs- 45 minutes Zumba Toning 45 minutes Just Weights
Friday- 45 minutes Bootcamp, 1 hour Zumba
Sat.- 1 hour Zumba.

So, how much working out is too much? I'm sore after my workouts but it's a good "I pushed myself" sore rather than a "Oh my word I can't move" kind of sore. I started out using 5 lb weights and now am using 8 lbs and use the 12 lb rather than the 9 lb bar when we use bars. I've also gone from being able to do 2 real pushups to being able to do 11. So I know I'm getting stronger and more fit- but I'd really like the scale & tape measure to show my efforts as well

    Whenever I felt like I was hitting a plateau, I would increase my calories by 300-400 for a week or two and then drop back down and that usually fixed it. I was working out A LOT as well, and rarely took a day off, so I don't think the exercise had as much to do with it. Although, maybe you're eating more than you need to? I can't see your diary so I don't actually know.

    and by usually, i mean always. though i only did that twice.

    you can over train, it can cause your body to kinda go in a stress mode. When this has happened to me in the past I would cut back on exercise. Then usually within a week I would experience a big drop and then i would add the exercise back slowly. But every person is different

    Bump. Somedays I train to the point that just the idea of eating back all my exercise calories seems repulsive. Today was one of those.

    I hear ya. The days I train the hardest are the days I mentally want to eat the very least. I think to myself, "wow look at all this hard work you put in today to burn all those calories, why would you want to eat anything to offset your gains?" Its bad. But I find myself doing this at least once a week and today was one of those days. I worked out and burned twice as many calories as I ate. If I did this repetitiously I would go into starvation mode...not good.

    Me to! The idea of consumeing 900 extra calories after 6pm
    is repulsive all i want to do is shower and crash!
