easily transportable pudding to feed six

Has anyone got any ideas for this? It needs to feed six people who aren't especially health conscious themselves but preferably not be so calorie, sugar and fat laden that I feel terrible about eating a little bit.

It will also have to be completely prepared in advance (though could be heated up again) and also be suitable to transport in a car for a couple of hours.

I pretty much never make puddings so am a little out of my depth!

I'll be lynched if I try to feed them fruit salad or something :tongue:

    there is JELLO sugar free 60 calorie pudding you may want to take a look in to that.

    I don't have a recipe to hand but you could do a rice pudding and make it with skimmed milk to cut down on the calories.
    Or a cheesecake made with Quark (fat free) instead of cream cheese.

    Can't really help with the pudding part but I can help with the transportable part. ~_^ Walmart has starting selling these applesauce to go packets. (http://www.materne.us/homepage/) My sis and I discovered that they're easily reusable! So I'd pick up a few of those, take the applesauce out then wash and fill them with whatever low calorie pudding you'd like. Then you could easily stick them in a bag with ice if you needed too as well.

    you can put fruit on the bottom and vanilla (Royal sugar or fat free) pudding on top. can't you just put it in tupperware?
