Quesadilla & Mini BBBs Lunch Box (w/pic)
A few months ago I decided to try Tofu. My husband was going to be out of town so it was the perfect time since I was my only taste tester. I have to say I wasn't impressed. It was 'okay'. But it didn't wow me and make me say "OOOO delicious! Must try again!". So the rest of my tofu block went in the freezer.
Fast forward to the present. I decided to give tofu another shot with some Vegan black bean burgers. Again, it didn't wow me but it was more palatable than the first time I tried it. My husband, however, did not like them. But since I already made mini burgers to stick in our lunches today, too bad! ~_^ They are small enough that if he doesn't eat them he won't go hungry though. At least I used up the rest of that block of tofu in my freezer. I hate wasting food!
(The face on the quesadilla is what I picture my husband's face looking like when he opens his lunch box and sees the burgers again hehe!)

4 Mini Black Bean Burgers (Recipe here: http://theveganmouse.blogspot.com/2008/12/smoky-tofu-and-red-bean-burgers.html)
4 Corn Tortillas
2/3 cup Shredded Cheddar Cheese
1 cup Romaine Lettuce, chopped
1/2 cup Cabbage, chopped
1 small carrot, chopped
1/2 cup Broccoli Florets
1/2 cup Salsa (mine is home made, recipe below)
1 Tbl 'Fry Sauce' (recipe below)
8-10 large Corn Tortilla Chips
1/2 cup Red Seedless Grapes
2 Pineapple Chunks
8 Raspberries
2 Tbl Salad Dressing
Spray one side of each of the tortillas with butter-flavored cooking spray. Place 1 tortilla, spray side down, in a pan over medium heat. Add half the cheese, cover with a second tortilla, spray side up. Let cook 2-3 minutes or until tortilla begins to brown on the bottom and the cheese is melting. Flip and cook 2-3 minutes more. Repeat for second tortilla. Cut into fourths, let cool then place inside the lunch boxes.
Toss together the romain, cabbage, carrots & broccoli. Place salad dressing in a separate container or on the bottom of a divided area of the lunch box. Place salad on top.
Place black bean burgers and chips in the lunch boxes. Divide and add the salsa in separate containers. Add the fruit in a separate container as well. Use a condiment container and add the fry sauce as well.
Sassy Salsa
5 Roma Tomatoes
1/2 Onion
1 Serrano Pepper
2 Tbl Cilantro, fresh
2 tsp Lime Juice
1 tsp Salt
Deseed and dice tomatoes. Mince onion, serrano pepper (scrap out the seeds to reduce heat) and cilantro. Mix all ingredients together in a medium bowl. Serves 6.
Utahn at Heart Fry Sauce
1/4 cup Mayo
1 Tbl Ketchup
1 tsp Mustard
1/2 tsp Worchestershire Sauce
Mix all ingredients together until well blended. Serves 6.

To really add a flavor boost, I would recommend adding cajun seasoning to the burger mixture before cooking. I add cajun seasoning to my blackbean burgers (and corn, sometimes red bell peppers and spinach, chopped finely in my blender) and they turn out lovely (:0
