Crustless low cal, almost fat free Pumpkin Pie!

Crustless Pumpkin Pie

This has less than 1g of fat, is fairly low carb for a sweet and low cal! Just make it with no crust.

Ingredients:
1 (15 ounce) can pumpkin (not pumpkin pie filling, just pumpkin, no added salt)
12 fl oz. skim milk
3/4 cup egg substitute
1/2 tsp salt
1 tablespoon pumpkin pie spice
1 teaspoon vanilla extract
2/3 cup Splenda (brown sugar blend or regular)

Instructions:
1. combine all ingredients and beat until smooth
2. pour into a 9-inch pie pan sprayed with cooking spray
3. bake at 400F degrees for 15 minutes, reduce temp to 325F degrees and bake for 45 mins more
4. pie is done when knife inserted into centre comes out clean

8 servings

Nutrition Info:
122 calories
0.25 fat
0.175 saturated fat
0.9 chol
216 sodium (or 71 if you omit the salt or use a sodium free alternative)
27 carbs
4 sugar
4 protein

If you want to make this in a crust instead you'd just need to add the nutrition data for 1/8th of the crust to the nutrition totals for the pie itself :)

    OOOH MY GOODNESS! Thanks sooo much for the recipe! I have been wondering what I was going to do when it came down to seeing pumpkin pie on Thanksgiving! I will have to just make my own and bring it! THANKS AGAIN!! :happy:

    You can make a low-fat or no-fat pie crust using graham crackers and jam to hold them together :)

    Ooh, now that's a good idea!

    The main problem for me is that I'm watching my carbs a bit. Not doing anything crazy like Atkins, but Diabetes is very present in my family. I know I'm at risk if I'm not careful, so I'm trying to get a jump on things early and watch my sugar and carb intake. My dad's doctor explained that carbs are really what he needs to keep in moderation. For me, a sweet that doesn't ruin my normal carb count for the day is a good thing, and I'm assuming the low cal or fat free crust (being graham crackers) is going to contain quite a few carbs, adding more than I'd like to have per meal/snack. But that's just me! I think it's a great suggestion (for example, I have sugar free jam I could use), and I don't see why I couldn't do that ever so often. Just not all the time :)

    WOW That's a fab recipe, I can have all the filling I want, but sadly, not allowed the pie crust any more, this is a great substitute - thanks for sharing

    And just a note. I'm sure the calorie count for regular splenda is correct, but I believe the splenda brown sugar blend actually contains brown sugar (which = extra calories & sugar).
    Please correct me if I'm wrong!
