Hello all, me and the bf are going camping in a few weeks for about 3 nights. I would like some ideas on camping recipes that you have tried. It can be prepared before or on site either works for us. We do have a propane stove and also a charcoal grill if that helps..and will have access to ice for our cooler to keep things fresh...

    There are lots of possibilities...you could grill meats like fish or chicken...you could make shish-kabobs and grill them...you can grill veggies like corn on the cob, zucchini, squash, onions, etc....you can wrap fish and almost any veggies in foil and grill that over an indirect fire. You could make and take a garden salad or a 3-bean salad...even a low fat coleslaw. For desserts, you can grill some fruits like pineapples or peaches...yum. I'm gonna have to tell hubby we are bbq'ing tomorrow now...lol :laugh:

    If you can purchase one of the metal "pie" cookers (can be gotten at walmart, etc) you can make pockets of just about anything! Our favorite is pizzas. 2 slices of low cal bread, with a very light spread of low cal marg, nestle the buttered side into the cookers (grilled cheese technique), take about 1/2 tbsp spaghetti sauce, thinly spread over one piece of bread. Add whatever pizza toppings you like - we like onion, mushroom and pepperoni - you can use turkey pepperoni and it only takes 4 to make a pizza. Sprinkle with a little shredded cheese, and carefully close pie cooker so ingredients are sandwiched between the slices of bread. Cook over campfire, turning occasionally to cook both sides evenly. Depending on hotness of fire, will take about 5-7 minutes. Turn out onto plate, let cool a minute, then slice from corner to corner to let steam escape - and enjoy! Super yummy, and reasonable calories!

    We also like the foil packet method for meats, and you can also do baked potatoes in heavy duty foil down in the fire coals.

    You can also make up a taco salad mix ahead of time to take in the cooler -1 lb ground turkey, 1 packet taco seasoning(or we season our own to reduce sodium), 1 can of tomato soup, 1/2 cup light sour cream, shredded cheese. Season and brown turkey. Add tomato soup (no water). Stir in tomato soup, then shredded cheese (I use about 1/2 cup). When cheese is melted, add sour cream, remove from heat and stir to combine. You can use immediately, or refrigerate for later. If using later, warm mix slightly before serving. Great on top of a big bed of lettuce with some crumbled tortilla chips!

    Now I really want to go camping too! Have fun!

    We go camping every weekend we can. We have a little gas grill, plus the campfire with a tripod that sits on top of the fire. We bring food right from our freezer and camper. Use cast iron skillets to cook up sliced potatoes/green peppers/onions, bring salad mix if we have it, eat vegetarian baked beans, bring reduced fat hamburger and hot dog buns. Breakfast is eggs and mini bagels toasted on the grill, lightly buttered. Meats are chicken, lean steak, 95% ground beef burgers

    We do s'mores but watch the quantity. Even there, I use reduced fat graham crackers.

    Like I said, we pretty much eat the same foods we do at home but they always taste better while camping!!:wink:
