low carb bluberry muffins

The muffins are a hit!! So here ya go:
Put this in a food processor...
1 c fine almond meal
1/2 c vanilla whey powder (2 scoops of mine)
1/4 c vital wheat gluten
2 Tbsp butter
2 Tbsp coconut oil
2 tsp baking powder
1/2 tsp baking soda
3 packets of splenda or 2 of stevia
Pulse that all together then add:
3/4 c unsweetened coconut milk (or whatever milk you use)
1 tsp vanilla
Pulse again then fold in 1/2 c or so of blueberries.
Bake in a 475 degree pre-heated oven in 12 paper-lined muffin tins for 10-12 minutes. I have them figured at 130 cal, 8g prot, 4 carbs each. Picky kid tested and approved!!
