Squidog Lunch Box (400 calories w/pic)
Today is grocery shopping day. Which means it's also clean out the fridge day. Any leftovers need to be used, frozen or thrown out. I had some black bean, zucchini, bell pepper, corn....concoction I had made late last week so I re-made it for lunch today. I threw in some bean sprouts and a bit of peanut oil and sauteed it. That was really the only cooking required for this box so it was really fast. "But you did fancy cutting!" Nonsense! Octodogs and Squidogs are really fast to make. That's why they're so popular in Japanese bentos. Just a couple quick slashes before cooking them is all you need to do.
2 Servings (1 pictured) | 400 Calories ea
2 Fat Free Hot Dogs
2 Whole Wheat Hot Dog Buns
2 Part-Skim Mozzarella Sticks
4 Romaine Leaves
1 Small Carrot
2 Medium Radishes
4 Grape Tomatoes
1/2 cup Red Seedless Grapes
1/2 cup Green Seedless Grapes
1 cup Bean Sprouts
1/2 cup Black Beans, rinsed
1/8th Green Bell Pepper
1/4 cup Whole Kernel Corn
1/4 cup Zucchini, chopped
1/2 tsp Peanut Oil
2 Tbl Light Salad Dressing
2 Tbl Ketchup
Saute black beans, corn, bean sprouts, and zucchini in peanut oil for 5-8 minutes, stirring frequently. Remove from heat and let cool complete then add to the lunch boxes. Use 2 romaine leaves to divide it from the rest of the box.
Make the squidogs (tutorial here: http://lunchinabox.net/2008/02/22/how-to-make-an-octodog-octopus-hot-dog/) and cook them in the microwave or boil them in water. Carve the cheese sticks in a similar fasion to the squidogs. Add to the lunch boxes. Use ketchup or mustard to make faces on the hot dogs if desired.
Roughly chop two of the romaine leaves. Slice the carrot. Add all remaining ingredients to the lunch boxes as pictured.
