So yesterday some of my friends commented on the deliciousness of my dinner and asked for a recipe. I made it up, so hopefully it makes sense because it's easy and delicious! Oh yeah, it's also pretty easy, so hold on to your britches.
8 carrots, sliced in strips
2 Tbsp EVOO, divided
2 tsp salt
2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground black pepper
4 boneless pork loin chops (approx 1/2/ - 1 inch thick)
1 red delicious apple
1 granny smith apple
1. Heat grill to medium high heat. In a small bowl combine spices and mix thoroughly.
2. Toss carrots, oil, and spice mixture into a bowl. Place into a foil packet with 1 ice cube and put packet onto grill. Tightly fold the top and loosely fold the sides so you can check for doneness later
3. While the carrot packet is on the grill, rub the pork chops with remaining EVOO and sprinkle on the remaining spice mixture, let rest.
4. Core and cut the apples in half. Place the apples and chops on the grill, turning once until done.
5. Once you turn the chops over the carrots should be close to being done so, carefully unfold one end of the foil packet and check for doneness. Be sure to keep an eye on the carrots and apples and move them to a cooler art of the grill to prevent over cooking.

As far as pork goes, I'll eat an occasional slice of lunchmeat ham. I MAY have to try this out though. It sounds too good not to!0
